A Summer Salad From A Meat Book

book cover for Charred & ScruffedThis unusual salad comes  from an equally unusual grilling book by Adam Perry LangJoe Raffa's preparation of Peach & Nectarine Salad from Charred & Scruffed and Peter Kaminsky titled Charred & Scruffed. I am not familiar with his current restaurant project or other books, but his techniques in this book changed how we grill.  Among other things that I now do is make an herb brush for certain recipes cooked over coals. We also now scruff the meat and make a wet paste to massage into it. I also enjoy making his salt mixes which are baked. We serve this salad with grilled pork, and he suggests that it is good with fatty fish like our local bluefish or any cut of lamb. You can prep the salad and caramelize the peaches earlier in the day. Don’t add the initial oil and lime juice or the additional dressing until you are ready to serve.

 

Peach And Nectarine Salad
A seasonal salad only! Peaches and nectarines, roasted and raw, with almonds and mixed greens make this salad perfect for summer grilling.

  2. 2 tbs (24gr) white granulated sugar (I use caster sugar)
  3. 4 peaches, halved and pitted
  4. 1 tbs (14gr) unsalted butter
  5. 4 nectarines, halved, pitted and cut intp 1/8 inch slices
  6. 2 tbs(30gr) finely chopped red onion
  7. 2 cups (1/2L) tender dandilion greens or arugula leaves
  8. 1/2 cup (13cl) chopped cilantro
  9. 2 tbs (28gr) freshly squeezed lime juice
  10. 1 tbs (14gr)mild olive oil
  11. sea salt & greshly ground pepper
  12. Aged balsamic vinegar or condiment for drizzling
  13. Extra Virgin Olive Oil for drizzling
  14. 1/4 cup (35gr) toasted slivered almonds
Instructions
  1. Spread the sugar on a plate and coat the cut sides of the peaches with the sugar
  2. Heat a flat cast iron griddle or large cast iron skillet over medium high heat until sizzling hot.
  3. Add the butter and let it melt then add the peaches, cut side down.
  4. Cook until the peaches are well caramelized on the cut surface.- about 4 to 5 minutes.
  5. Transfer peaches to a plate
  6. `Combine the nectarines, red onion, greens and cilantro in medium large enough to fit the combined ingredients.
  7. Add a mix of the lime juice and olive oil, salt and pepper (taste first and correct if necessary) and toss the mixture in the bowl gently with the dressing.
  8. Mound the nextarine salad onto a platter and arrange the carmalised peaches around the perimeter.
  9. Drizzle with some balasmic vinegar, EV olive oil, sprinkle the almonds over the top and serve.
Notes
  1. Sometimes I have used Almond oil in the dressing instead of olive oil.
