Spectacular Spiced Pecans

This recipe is the best spiced nut recipe ever. It comes from Joanne Chang's Flour, too

  • 2 cup(s) pecan halves
  • 0.5 cup(s) caster (superfine) sugar
  • 2 teaspoon(s) cayenne pepper
  • 0.25 teaspoon(s) kosher salt

Spectacular Spiced Pecans Directions

1. Preheat oven to 350 deg F. and place a rack in the center of the oven. Line a baking sheet with parchment.

2. In a saucepan, combine the pecans, caster sugar, cayenne, salt, and 1/4 cup water over medium heat, stirring constantly with a wooden spoon. Continue stirring for 8-10 minutes, or until the sugar crystallizes, coats the pecans, and turns a sandy white.

3. Remove the pan from the heat and pour the mixture onto the prepared baking sheet, spreading the nuts in a single layer. Bake for 12 - 15 minutes, or until the pecans are toasted inside. To test, break a nut open; the interior should be a light golden brown. Let the pecans cool on the bake sheet for 20 to 30 minutes, then transfer them to an air tight container. They will keep at room temp. for up to 2 weeks.
