dulceyThe Cuisinettes know their obligation: taste chocolate to see what we should cook with and nibble.  After a great deal of nibbling and deliberation, we decided that Valrhona's Dulcey chocolate couverture was definitely pantry-worthy. It really is a caramelized white chocolate.  It makes great ice cream or a sauce to put on a bitter chocolate sorbet.  It sets a new standard when used in a blondie recipe.  Dulcey is a white chocolate that has carmelized in a similar way that milk is caramelized for Dulce de Leche.  And it only took eight years of research for Valrhona to figure out how to produce this delicious  riff on white chocolate.

peppadewPeppadews should be one of your pantry staples.  It's great added to savory corn muffins, kabobs on the grill. just about any summer salad - and one of our favorites - stuffed with herbed ricotta cheese.   But you can stuff them with guacamole, a bit of crab or chicken salad.  They are the perfect bite with drinks. They add a nice zip and texture to a midweek frittata or added to pasta dishes with a bit of sausage.   We have them both in the red and the yellow which were  South African crops but are now grown both in New Jersey and Peru! gill melloerWe are honored that Gill Meller, cooking teacher and food stylist for the River Cottage television series will be here this afternoon to introduce you to the US publication of his cookbook GATHER. This is an intimate book, almost like having a meal with him and his family. Recipes are homey, but also have an elegant glamour to them too.    

 We have been big fans of the River Cottage cookbooks and the sustainable approach to cooking that Gill promotes so beautifully.  If you have been fascinated by either the River Cottage cookbooks or have seen some of the series, which is extremely popular in Great Britain, gatheryou will really enjoy going through his cookbook and talking with him.    

 

 Gill has a very distinctive palate and takes both commonplace and unusual ingredients to create simple but striking recipes. Desserts are not doused in frosting or gooey sauces. Entrees don't have their components piled on top of one another.  Salads have lovely textures and surprises mixed on the plate.  It's not just a pile of mesclun.

katclass Katrina Tines' cookie decorating classes sell out quickly, and this one is no exception.  It's one that she designed to improve your beginner skills with Spring themes which will include ideas for Mother's Day, Easter and other  Spring celebrations .  You'll get plenty of time to practice specific decorating techniques for seasonally themed cookies. Students get a charming  Spring Polyresin cutter set (includes  a bunny, chick, tulip, parasol,  butterfly, lamb,  egg and  even a duck) 

Katrina will use these shapes in cookies to train you on how to outline and use simple flow techniques.  You will also learn how to use luster dust and dragees to create sparkly effects.  Once you have taken this class, Katrina is offering a more advanced class with really neat techniques that can be used on both cookies and cupcakes.  Also, you will learn how to make the proper consistency icing for outline and flow and how to work properly with an icing bag and squeeze bottles.  spring

You may have seen some of the cookies on our Facebook page or our Instagram account heralding this new and unique workshop from Katrina Tines.  It is at the intermediate level, so if you have taken her beginning classes, you are ready for this.   It is based on Beatrix Potter's Peter Rabbit stories.  We will provide you with a swag bag with the cutters and some of the new tools and ingredients you need when you go home and practice your new skills.
 
You will work with royal icing to expand on beginner level skills and learn to add more depth and texture to this decorative cookie set.  She will train you on hand piping designs and details, including fences, vegetables and different types of leaves.  And you'll learn how to make and use edible moss and  use royal icing to make sugar transfers that can be dried and kept for later projects.  Katrina will train you to use fondant to create vegetable details.  As a final bonus, she will start you off on hand-painting with food colors so that you can  paint your own Peter Rabbit. Your bag will include a box to pack your cookies in to take home.
