May 17, 2008 - THE BEST ICED COFFEE
This Swiss company has provided us with excellent coffee for many years. All their blends are carefully chosen from 100% Arabica beans which provide the best tasting coffee with less caffeine than Robusta. The blends are roasted at 3500 feet in the Swiss mountains. The reduced atmospheric pressure allows longer roasting to develop more flavor without burning. The philosophy of the company is clearly borne out in the taste of every cup of coffee produced by their blends. Longer roasting yields fuller flavor and no burning means no bitter aftertaste.

The Classique blend that we have chosen for today’s tasting is a popular house coffee in fine restaurants and is similar to a French roast in this country. It is a mix of Arabica beans from Brazil, Columbia, Costa Rica and Mexico. Since the weather is warming up, we thought the iced version of this coffee would be most refreshing. It will be even better since we have opted to use coffee ice cubes as well, thus the coffee is not diluted. ( We can’t take credit for that idea, we actually borrowed it from Bubbie’s Pie Company in New York.)

May 24, 2008 - REFRESHING ICED TEA
Few things are more refreshing on a warm Spring day than a glass of well prepared iced tea made from a high quality loose tea. With that in mind, we have chosen to serve it today for the Saturday Tasting. We will make it from our superb Robert Wilson Brunswick tea leaves, and yes, we will make tea ice cubes for it!

This is an excellent single estate, unblended Ceylon tea that is much favored in the UK. It produces a medium-bodied flavor with enough strength for morning tea, yet is balanced to drink all day. It is expecially delicious when cooled and poured over ice. We hope you will plan to stop by and try some.

May 31, 2008 - THERE’S A NEW CHOCOLATE IN THE NEIGHBORHOOD
We have been carrying a few varieties of Cluizel chocolate for several years,and as many of you already know, it is an exquisite couverture to work with. Unfortunately, it has often been difficult to import, so our supplies have been rather inconsistent. But, finally, the company has developed it’s own US distributor! Larissa, Stephanie, and Lizbeth (our three year old Cuisinette) recently spent a most enjoyable afternoon of chocolate tasting on your behalf, and are very excited to have the opportunity to introduce these new estate varieties to you.

Today we will offer each of these new varieties for your own tasting pleasure. We hope you can drop by and choose YOUR new favorite chocolate.

June 22, 2008 - HANDS-ON KNIFE SKILLS CLASS WITH JOE RAFFA ( This class is now sold out. Please check back for future class dates.)
We are thrilled to announce that Joe Raffa will be teaching another knife skills class for us on Sunday, June 22, 2008. Joe is now the Executive Chef at Oyamel in Washington DC, and has recently been nominated for the Rising Chef Star of the Year Award by the Restaurant Association of Metropolitan Washington. If you have had the great pleasure of dining at Oyamel, you already know that his presentation skills are exquisite, and you can learn a few of his secrets. Not only will you learn knife skills and knife care, but you will have the opportunity to work with our selection of first-rate knives. Joe will share his extensive knowledge of all types of knives and manufacturers that will help you in making future knife purchases.

Class size will be limited to six, so everyone gets a chance to work directly with the chef. The class will be held here at the store from 10:00AM until 1:00PM, and you don’t need to bring your own knives to use during the class, as we will have a selection for you to try. The cost for this class is $75.00, and registrants will receive a coupon for six free knife sharpenings as well as a 15% discount on any purchase or order made in the store within sixty days from the class date.
