One of the things we discovered with really terrific couvertures, was that Milk Chocolate does not have to taste insipid. Most of the milk chocolates you taste have less than 30% cocoa. Bahibe has 46% cocoa from a particular bean in the Dominican Republic. It has creaminess plus the complexity of dark chocolate. As with all our featured couvertures, there will be a lovely length in flavor. Bahibe is just on the edge between milk and mild bittersweet. You will taste a tang of dried fruit so that it pairs beautifully with sweet fruits (banana, pineapple, tangerine/orange, pear, and dried fruits), pralines, spices (vanilla, pepper, fleur de sel), coffee, caramel, cookies/cereals, and toasted sesame.
