This section features our choice in cutting boards, knives, steels, and protective equipment for them. In addition, our selection of mandolines is included.

We stock and special order cutleryfrom Sabatier 62 in France, Messermeister and F. Dick in Germany because their knives are used frequently in restaurant kitchens. In addition we feature true carbon steel as well as stainless steel versions. There are benefits and disadvantages to both. Carbon steel knives have a very sharp edge which can be easily maintained. They will discolor and rust if allowed to stay wet. Stainless steel (their degree of hardness and quality differ among manufacturers) is much harder and will thus maintain an edge longer than its carbon steel counterpart, and will not rust. This edge, however, is very difficult to resharpen manually when it becomes dull. All three suppliers produce fully forged knives as well as lighte unforged utilityknives.
